Sounds like the old film Horror Hotel, which was made into a CoC scenario in Coming Full Circle.

Ah, gotcha. I suppose I did shortcut there, trying to avoid laying out an an entire scenario from start to finish... I'm long-winded enough at the best
Invent a marginally plausible excuse ("something he ate"), change the direction of the story for the session, have the players do something
Running some one shots sounds like a good idea - it will help you master the rules and also get a sense of what kind of games
